150克鸡蛋黄
适量1. 取两个鸡蛋黄,打散。2. 倒入温好至35度左右的椰浆,搅拌均匀。3. 加入酵母粉。4. 逐点加入木薯淀粉,交搅拌至无颗粒状,将粉浆放在温暖密封处发酵一到两小时。5. 烤盘刷上一层薄薄的油。6. 将烤盘放到烤箱预热两分钟。(200度)7. 倒入粉浆,上烤箱,230度烤30分钟即可。香喷喷的椰香黄金糕就做好啦!

  主料:椰浆150g;木薯粉130g;黄油10g;糖70g; 100g;酵母3g
  辅料:水20g
  椰汁黄金糕的做法图解步骤:
  1.3克酵母用20克的水化开
  2.黄油隔水融化
  3.加入椰浆,木薯粉
  4.搅拌均匀,备用
  5.鸡蛋加糖隔水打发(温水45度左右)打到鸡蛋体积膨胀,颜色变白(海绵 的打发)
  6.打好的鸡蛋,体积变大,颜色变白
  7.加入酵母水
  8.加入木薯糊
  9.搅打均匀
  放在温暖(28度为佳)处醒发90分钟,期间30分钟用手动打蛋器搅拌,每次半分钟左右
  10.准好容器抹点油(我用不沾模具的没抹油)方便脱模,倒入木薯糊,需要再次醒发40分钟
  (醒发好的木薯糊,表面是许多的小气泡,)
  11.烘烤 温度200度 时间 20-25分钟 (表面烤到金黄色即可)
  脱模放凉
  12.个人觉得黄金糕冷冻之后口感更好
  因为烤好放凉之后吃感觉偏软了一点
  放凉之后放冷冻,要吃之前提前解冻
